If you didn't like either Hyrule Warriors title because of the gameplay, you won't like this either.
If you did like them, you probably will - but due to the class system in this game, all the units are basically the same, with a relatively low amount of total movesets (especially compared to HW : DE).
What they've added as part of the 3 houses skin on a musou:
- full voice acting for an insane amount of lines
- 3 mostly distinct story tracks, each with 1 decision that slightly alters the rest of their runs (you will want 6 total runs for complete view)
- story tracks largely are additive to 3 houses, not repeated. They assume you have most of the core knowledge already.
- support system from 3 Houses
- weird face touching time from 3 Houses is upgraded to trips with implications and conversations
- a Byleth with actual personality
- The training system from 3 Houses and class system from 3 Houses.
- insultingly easy unit recruitment
- insultingly easy gameplay in the form of double-specials and on-demand WPG reveal via 2 moves that drain weapon durability (which can be forged to be absurd).
- slowly upgradeable main base and a weapon forging system that completely sucks.
If you don't know if you like musou games, this is not a bad starter (but you should only get it if you're also a fire emblem fan because the other switch warriors games are better).
Hyrule Warriors: Definitive Edition is definitely the best musou experience you can get on the switch though. The story is all there is to play through in this game. There are no "challenge" missions.
You should pick up and play from HARD because the game is entirely trivialized by pairing up and using skills. This will also unlock the highest tier of difficulty after your first playthrough.

I don't understand why they don't just match themselves anymore when it wastes them more money to do it this way
Easy. They filter out these type of people and ban them eventually.
