What makes 27" 1080p a problem? I'm admittedly behind on monitor tech, and have no idea what to be looking for these days. The only thing I need is external displays (I don't need audio or anything like that). Ideally I'd have USB-C connections from the monitor, but I'm thinking I probably won't find USB-C connections at this price-point. I guess I'd just need to buy a hub of some sorts, to connect two of these to my MacbookPro.

Absolutely nothing. The people that have a problem with it are going to say it's not 4k. Not everyone games at 4k. I've worked with a 27 1080P monitor for a long time no issue. No, it doesn't look terrible. In fact, I would pick up two of these and work in dual monitors if I needed them.

This combination has a lower pixel density which makes the image look worse than one that's higher res at the same size.
Up to you if that matters but there's plenty of cases besides being a gamer where someone would want more pixel density/a higher quality image.

The problem is this is a 27" 1080p.
One thing I never considered is presenting in Teams, Zoom, whatever. 1080p is a great idea as a second or third monitor for screen sharing.
