Canon had a really good deal on the RP refurbished body. I got the RP body, RF 50mm, RF 24-105mm, EF adapter, and EF 75-300 for around $1000 (all refurbished). They all looked new, except for coming in different boxes and lacking lens hoods. The bodies are out of stock now, unfortunately.

That is a fantastic kit at a fantastic price. You'll be very happy with it. Covers all your needs for $1,000 in full frame. Just amazing.
In the same sale, I bought an EOS R, the control ring adapter and an RF 50 1.8. The EOS R already arrived. Looks brand new. No signs of prior use whatsoever. It's likely brand new sold as refurb.
I also have a Sony A7R III, which I preordered at full price when it came out. It made sense at the time when camera tech was advancing fast. (The A7R III was quite a leap forward.) No more. Image quality has been essentially the same for the past decade. Now I'll only buy new bodies on closeout sale prices. The EOS R at $899 including a free, $250 battery grip was the right price.
If you can make the stretch, you could get a second hand A7III and the 28-70 from a site like MPB or KEH for a few hundred more. There were significant advances between the A7II and A7III in terms of autofocus, shutter speed, battery life, and a BSI sensor. The A7III is a much more capable camera.
