Open it. Plug it in. Sign up for a Nintendo account. Download all updates, including updates for any games you purchased. Maybe Nintendo's servers have gotten better over the years since the Switch was released, but I wouldn't take any chances. You don't want to be spending hours downloading updates on Christmas day.

It must be purchased on the Switch. I opened ours, created an account, and preloaded games. The deals this time of year are good and it avoids waiting for setup or downloads on Christmas day.

Use Deku Deals to monitor prices.

Bummer. Getting a switch for the kids for x-mas but since I don't have one tied to my Nintendo account yet, it won't let me buy this. Am I missing something?

The game's official website link on the eShop gives an error, and if you try to go to the website directly, it tries to install a chrome extension automatically when you land on the page. Red flags galore.

Yes, I did this as well a few days ago. It took several hours to download the updates and 3 digital games. I can't imagine what a mess it is on Christmas Eve or day. I also pit a screen protector on, put it all back in the box and wrapped it, so it's ready to go on Christmas.
