I've been using this for years.

Pro-Tip (since its left off most recipes):

You want to buy Iota Carrageenan and guar gum powder. Makes the ice cream smooth and soft without completely overloading it with fats.

I use no more than a 1/4 teaspoon of guar gum (probably more like 1/8), and no more than 3/4 teaspoon Carrageenan per 2 quarts. Mixed with the sugar before adding it.

Too much guar gum, and the ice cream becomes gummy. None, and you're ice cream will be icy. (Unless you use more than 50% cream and yolks... which I find kind of gross and heavy)

Paid 80+ several years ago for this same unit. My wife has used it dozens of times and it has been reliable and made some great ice cream. It was the best reviewed ice cream maker under the 200ish range when I researched it back then.

just a warning to anyone buying one of these for a Christmas present, it looks like it may not arrive until after Christmas. Sam's club has the same unit on sale for about the same price and they say they'll deliver to my area by the 22nd. Hope that helps!

So yours is more like ice milk?

I like my ice cream slow churned but my partner loves it ice hard like Coldstone. Any tips?

Interesting...I've never heard of using guar gum powder. I made a couple of batches a few weeks back using whole milk and heavy whipping cream and they still came out icy like you mentioned. I thought I just needed more fat like egg yolk but I'll try it with the guar gum.

Do you need both carrageenan and guar gum or can you just use one and not the other?

This makes awesome custard or ice cream. I use these to store the finish product to allow it to harden a bit. Also keeps ice crystals from invading: Tovolo Glide-A-Scoop, Non-Slip Base, Insulated Ice Cream Tub, 1.5 Quart, Strawberry Sorbet https://a.co/d/4vGQ2jv

Too bulky for freezer. Too much work to clean and too loud.

Other than that, it's a good ice cream maker.
