If you were ever intimidated to make Prime Rib, google Chef John's Perfect Prime Rib recipe. I've made it this way every year, super easy and comes out perfect each time.

Seems there are more rib roasts avail now around Xmas/NYears. Other vendors here like Shop RIte, Giant, Costco, Aldi, Lidl et al are running sales on this.

I use the smoked prime rib recipe from heygrillhey... after smoking it 3 years ago... we have done it every year since.

Sous vide to 128. 500 degree cast iron, tallow and 1.5 to 2 minutes per side.

Roast the ribs and then use them to create a large batch of bolognese for future use. Or smoke them.

If you want to do the roast, take off the rack, kosher salt the night before and wrap it up. Brown in a pan and then tie it again to the rack to complete the roast. Put a thermometer in it and take it out around 125 and let rest covered with a loose piece of foil for at least 15 minutes.

There's a massive drought in the midwest and cattle farmers can't feed their stock and are selling a larger share. It's going to be expensive next year so enjoy while you can.
