I have 4 slots, 2 are used with 8gb in each.....could I add 16+16 to my current 8+8 for a total of 48gb or ram?

In general yes, but also make sure to check your ram speeds, I might be wrong but I believe your system will be limited to whatever your slowert ram speed is when you are mixing and matching.
