I've personally felt the lag on my wife's 8GB M1 while doing trivial tasks. Prefer it over any Intel? Absolutely. I've used almost all generations of the Intel 16GB MBPs since their inception in 2012 for work, and currently use a 32GB M1 Pro for work so I am familiar with the spectrum of tasks. I'm a software developer as well as a photographer.
I'm all-in the Apple ecosystem and have been for some time.
But IMO the 8GB is still shameful in this day and age, at the very least for anything called "MacBook Pro".

While Apple Silicon handles many apps really well in terms of speed, how hell the new CPU architecture could help one to load a large app/data in memory?
If you only consume a content (youtube, netflix, spotify, reddit, sd) then even if you have a lot of apps/tabs OS can just move them back and forth between RAM and SSD (swap) quickly and you won't notice the issue (unlike let's says Windows with slow disk). But still, many sites are now memory hungry – while I'm writing this post, a tab with amex site consumed almost 1gb of RAM. Simple browsing may cause high memory pressure (check Activity Monitor -> Memory tab) and thus extensive swapping. I use 8gb M1 machine right now in my bed and my swap size is 4.2gb (that's over 8gb), only browser tabs and office apps (also extensive swapping causes quicker SSD wear). I've experienced lags on 8gb machine with only browser tabs. Even iPhones (max one app on the screen) have 6gb RAM nowadays (iPhone 12 Pro and newer).
Let me re-phrase my post in car terms - this post is about a nice prev. MY pickup with AWD and towing rating. And you say why one needs AWD and tow rating to use a car for commute in Miami. Yes, there is no benefit from these things for commute and grocery shopping. Another question here is why people buy large pickups to drive between mcdonalds and walmart. But that does not mean that nobody needs them.
But it's a good price don't expect the M3 MBA to be anywhere near this price.
