I specifically posted low end specs with a powerful processor, since these are not laptops and can be upgraded to your liking for cheaper. There are plenty of options with 16 and even 32 gigs there for reasonable prices

Nope - I am using an older version (g5) - these are HP's answer to the Mac Mini - same size and everything. I love mine (I have my two previous ones stuck on the back of TV's in my game room for streaming), but what you see is what you get.

If you want upgraded, non integrated graphics you'll have to find a store that has the ~$60-70 Thunderbolt add-on card instock and then get an external GPU.

There's a port in the back that can be customized for an extra video output. It is not a video card.

FWIW, I have a couple off lease G6 models running Proxmox for home server duties. They have nvme drives for VMs and 2.5" SSD for raw storage. They only pull 65w max and really don't break a sweat unless I'm moving VMs. They were like $200 each when I bought them. Depending on how you want to use them, buying new might be overkill. Save money on the machine and buy storage/ram instead. You likely won't notice a performance difference.

I have a real edu mailbox, but I think your best bet would be eBay - you can get one there for cheap

You can add thunderbolt to these for relatively cheap after buying, unless they removed that ability in the most recent gens. I've done it and used it with external GPUs no problem. There is in fact an option for an internal dGPU (or was on the previous gen) but I don't recall the rules for it, it may not be something you can add on later.
