The only advantage I see for this knife is it's smaller. My wife thinks 8" blades are too large. My young kids don't really have good control over an 8" blade, either. This is basically a smaller chefs knife and they would probably do better with a knife like this.

The pointed tip might also help with some precision cutting tasks vs a santoku. Though I think I would just as soon use a paring knife I already own instead.

Not sure what this particular knife steel is but the price seems pretty decent. Amazing how expensive the Victorinox knives have gotten.

Don't bother with a prep knife. Get a good 8" chef knife. 30+ years of cooking and never needed one. A paring knife for small delicate work like removing silver skin is nice. If you buy whole bread or bake your own get a good bread knife. A cleaver if you want to chop through bones. Bones WILL DAMAGE your knife. Finally get a knife sharpener, something with multi stage and ceramic rods to hone. the knife will get dull eventually no matter how good the steel. I use the ceramic rods before I start using the knife daily. Been using the same chef knife with a riveted wooden handle for 22 years. I think it was a farberware professional made in China with mystery steel. The knife has been used so much the markings have been worn off except for the made in China stamping.

I my household the 5-6" utility / petty knives are the single most frequently used and so we have a few different ones. The shorter blade makes them way more maneuverable and comfortable to use for most cutting tasks. The 2nd most used is the 7" santoku, The 8" chefs is used the least (I mean aside from specialty knives like a bread knife or slicer). In our house, we could probably do without the 8" chef entirely, we much prefer the santoku for the longer knife.

A lot of it boils down to preferences though as well as what types of things you are cutting.

If you are just starting out though, I'd recommend starting with basic beaters of those 3 lengths of knives (or even a cheap knife block set) and sort of go from there and see what you lean towards using the most. With knife sets, you end up not using half the knives there at all though or only very rarely unless you are really diverse with your cutting and needs.

I am a knife collector, trader and I buy and sell hundreds of knives in a year.
I would prefer a used German made Henckels from eBay over the modern Henckel knives that have the same price and are not made in Germany. You can get a used 5 inch 4 star chef knife for about $25 and it will serve you far better then this stamped knife, or a box store Henckel set
Henckel still makes good knives but only in their high end line of knives .
This is a professional opinion

Dont have this specific knife but several others in this line. Bought the set as our "starter set". That was about 11 years ago. I self sharpen every few weeks and they are still going strong. I find smaller knives are better for more precise cuts like when dicing a tomato. Sometimes a big chefs knife is too much.

I hate to hijack the thread, but can one of you pros recommend a decent sharpening solution for my kitchen knives? For a $100 budget, is it worth it to get a Workpro belt sharpener or is there a stone kit that you recommend that will have everything I need?
