These knives are made in India. Henkles uses X50CrMoV15 across all their knives. Fibrox and Mercer Millenia use the same steel. Henkles specs a 15 degree bevel which I believe matches Victorinox. The Solution handles are kind of slippery and there's really best described as adequate. Overall, the deal knife should be plenty serviceable for most people who don't think much about their knives - little maintenance, frequent trips to the dishwasher, don't see much value in higher quality, etc.

For my Victorinox knife, I stone sharpen every 6 mos or so and steel it about once a week. Basically, when it starts to drag while cutting. The steel gets the apex in line and it cuts pretty good even though it's not as sharp as it could be. Since these stamped blades are thin there's very little drag while cutting. This means even a relatively dull knife will cut like a sharper, thicker, forged blade.

A pull through sharpener is going to create a frown over time and will likely change your blade to a wider bevel. These are cheap enough you might not care. But I will suggest you get a decent 1000 grit stone (King or Shapton Pro) and knowing this is a cheap knife learn to sharpen without fear of ruining a nicer knife. Murray Carter videos on YouTube will teach you all you need to know.

Forged are generally higher quality... but good stamped knives are a bargain. They keep a good edge, are easy to maintain, and cheap enough to replace as needed.

Not sure if it's always the case but my stamped ones are thinner than my forge ones which is great for cutting everything but heavy meat with bones

Please note that these are the "international" brand made in China, and not the exceptional German knives. I've not used this kind of knife, but they don't tend to ship garbage under the name so they're probably a decent buy at this price for an upgrade to your target or Walmart knife.

I have some. They were impressive at first, but edge retention is pretty poor. At least they are easy to sharpen, especially with a pull through knife sharpener because of the softer steel. This makes them good for someone who doesn't want to use a whetstone and wants a quick and easy way to sharpen. Just keep it in mind that they will need sharpening pretty quickly.

For $25ish you could get the small Victorinox chefs knife. The handle is better when wet and greasy. The steel might be a tad harder but it's similar.

I've been waiting for a deal on that knife for the kids and wife since an 8" knife is intimidating to them. But this is so cheap and I know it's going into the dishwasher so I might just get this set for less.

The Atoma 140 diamond plate is often used for flattening.

If you feel handy and cheap, pick up a flat porcelain tile larger than 9x4 and adhere some course wet dry sandpaper using spray adhesive. Be sure to use good sandpaper for this that doesn't clog or fall apart right away.
