You can get the A7iv for about the same cost. GM lenses, well, are another cost but worth it.

I got the GH6 cause I already had some nice lenses for it and bought the 25-50mm 1.7 lens shortly after and that lens is magical. It's so nice that the photos dont need to be edited. Looking at video tests from gh6 and S52, they look alike and GH6 maybe looks better with color.
Personally I think I'll use the GH6 for a long time due to the lenses being smaller and I dont think anyone can tell what camera things are shot on these days. It's more about your personal needs for flexibility. GH6 looks smooth hand held. these days id have ot play with the the S52 and GH6 to make up my mind but the lens weight and size does add up in teh real world.
Colors can be pushed a bit too. The key with these is high-quality ND filters
to get the right amount of light to the sensor as they are very few adjustments available.

If you plan on doing any kind of real editing, you can't get past physics. Small sensor, fixed aperture lens, etc.
Phone cameras killed the point and shoot and entry level DSLR hobby. They did nothing for actual hobbyists or professionals.
Plus, a $150 digital camera is a lot less worrisome to hand off to someone to snap some quick pictures with. Worst case they drop it. If it's the kind with a pancake lens, maybe the lens breaks and you have to buy a new camera. But it's only $150. And at the height of P&S, there were a lot of cheap models for <$100.
Also, the P&S cameras use SD cards. I don't have to worry about phone syncing or cloud bullshit, just a $20 SD card. I run out of space? Buy another SD card or export it all to a computer.
The physical controls are the really big deal though. You can blindly pull a P&S out of your pocket, point it in a general direction, hit the power button and then the shutter button, and you're done. On a phone you have to pull it out, touch JUST THE RIGHT PLACE on your screen to open the camera app, wait for the camera app to open, then touch just the right place again to take a picture.
