According to Apple, the Mac Mini is 1.41", so it should fit comfortably. Anyone have firsthand experience with this?

Yes.. I am currently mounted my 2018 Mac Mini model with similar product from Amazon (Vivo Mount).. it fits and works well.

Pet peeve but what goes in this is not the CPU, but the case that holds the motherboard and all other components, with the CPU installed in the motherboard.

My other pet peeve is all those people who keep complaining that they're not getting the stated storage space on their new drives, which to be honest isn't really their fault because marketing departments prefer to use mega, giga and terabytes to mean millions, billions and trillions of bytes, because it sounds more impressive. Thus, 1 trillion bytes = 931 terabytes, so that 1TB SSD you just bought is actually 931GB but it still has 1 trillion bytes so just relax and stop complaining, no one's lying to you. Sort of.
