You've got IPS and VA mixed up. VA panels are known for ghosting and IPS gaming monitors generally have higher refresh rates. Also, IPS panels have better color accuracy. That's why professional photo and video editors almost always use IPS monitors. The vast majority of professional gamers use high refresh rate 1080p IPS monitors due to the lower response time/ less ghosting. The upside of VA is better black levels. VA panels are great for slower paced single player games and movies. For fast paced competitive games, IPS is almost always preferred.
I went from a 1800R to a 3800R LG. My use case is office work and watching spreadsheets and code windows on a aggressively curved screen is terrible. Plus I use two monitors , flat makes more sense when monitors are one above another. Also I feel IPS is more versatile than VA which has great blacks but sucks at viewing angles
You'll notice a difference if you're used to higher curvatures (1800-1900R). Got this a few weeks back and returning it because unhappy with the noticeable difference in image quality because of lower curvature.

Is 3800r standard for a 34" ultrawide? Seems too subtle but maybe because it's IPS that's a good thing?

Sorry, calling 3800R as the curve is a joke, it's practically a flat screen.
The curve should start from 1800R and a good curve should be 1500R like Acer Nitro.
If you're going for a 34" ultrawide monitor, do yourself a favor and don't get this, get something with a real curve with a curvature radius between 1800R to 1500R, and your neck will thank you later.

I've tried 3 different VA monitors and keep coming back to the Dell S2721DS monitors.

VA panels are great for gaming. They have good colors and higher and better refresh rates than IPS panels. IPS panels often produce ghosting, so I wouldn't necessarily call VA "lower" than IPS nor avoid them like the plague. It really depends on your use case. I believe that pro gamers are still sticking with 1080P VA panels at this time.

That being said, I wish I knew what monitor has the supreme sweetspot, as there always seems to be something missing. I'm looking for 1440P, 200 Mhz, 1-5ms, IPS, and possibly curved ultrawide, but that's not necessary.

Edit: I'm dumb, I got TN mixed up with VA.

The 34" ultrawide screen size viewing from corner to corner required you to move your head or at least tilt slightly and if you stand or sit close to the monitor it will strain your neck.
The curve monitor will allow you to see the entire monitor real estate without moving your head much compared to a flat screen.
Especially, if you're planning to work mostly.

I'm surprised you noticed a difference in image quality around the edges, considering the wide viewing angles of IPS.

Great for remote work. I bought this during thanksgiving at same price. I use it with my MacBook and the fonts are crystal clear. Don't buy a VA panel for work.

I think this is true for a VA panel but for an IPS one, the less aggressive curve isn't a problem because IPS wide viewing angle.

For folks who use a 34" monitor for day to day stuff, not gaming or watching TV and videos, do you find that sometimes it's too large and you have to keep moving your neck and eyes which gets tiresome, and if so have you come up with ways to accommodate this somehow? Does a curved screen solve this, in part at least, and if so what kind of curve? I've got a 27" which I love but even it sometimes feels a bit too large so I'm guess that a 34" would be overwhelming for me. But it would be nice to have more screen real estate without getting a 2nd monitor, which I'd rather avoid even though my video card can handle 4 monitors.
