256gb SSD is the storage capacity and has nothing to do with the "speed" of the computer. The RAM and the processor is what you want to look at in regards to "speed."
Mac users please correct me if I am wrong.
With more intensive applications the 16gb unified memory when paired with 512gb will perform better than 8gb with 256gb. Now this might not be relevant to most but it does point out that the configuration does play a role in performance.
The 512gb disk is literally twice as fast read/write as the 256gb disk. If you're surfing the web you wouldn't notice, but if you're doing heavy image or video editing/processing you'll notice a major difference in speed.

That's not true, that's like saying theres no operational difference between HDDs and SSDs, they make a world of difference in opening apps, programs, and overall usability of a computer.

The 256GB SSD is measurably slower than the 512GB.

Correct. The 256gb models come with single 256GB nand chip instead of dual 128gb like the M1's. Speeds are slower than the m1 in benchmarks. The 512gb model has dual 256gb chips so its faster. However, I own both the m1 and m2 base models. At least for my task, there is not much of a noticeable difference. I would go for the 16gb ram if getting the m2 so that there is less swap from your slower ssd. Plus u can always get faster external ssd's but cant add more ram.
With the recent sale prices of Mac related devices it would suggest that the M3 chipset /OLED devices is around the corner.
Maybe, I wouldn't put it past Apple, but considering Mac M2 hasn't been out too long feels like that would be at last a year away for a mini. Maybe the studio will jump to M3?
is this worth it? i see that 256gb is 'slow' but i might be okay with that for the 16gb ram price
Yep its worth it for general use cases. Love mine. Picked it up this way and its fine. No slow downs at all. Can tell you its faster than my M1 Macbook Pro 16GB/1TB by quite a bit in real world usage.
