$20 more worth of wholesale cost for a bit more ram and SSD and this would be an incredible computer. Barely above e-waste as is. Apple's retail price for that $20 worth of upgrades to make it decent? $450.
Apple definitely positions their base models to push you towards upgrades... but even at 8GB / 256GB, this is a solid machine for probably 9 out of 10 people.

Given that most people just do internet and spreadsheets, this will have a useful life of 5-10 years. I still have a MBP from 2010 that I can use for all that with 8GB RAM. 16GB Macs will give you 10-15 years or more. These Apple devices are built to last. It's those cheaper plastic components that hit the landfill sooner.
EDIT: But yes, it is sad that Apple chose to solder the RAM and storage. It limits upgrades and takes away our right to repair.

RAM had to be soldered with how the current ASi chips are set up, the RAM is literally on the SoC which greatly increases speed. Sending it over an longer bus with an interface would limit this a ton. It will be interesting to see how they approach this limitation with any potential Mac Pro. I imagine it'd require considerably more power draw and not reach the same bandwidth.
Do a google image search for "Anandtech M1" and you can see how it is laid out on the chip.

I recently purchased one, they don't check edu status. Purchased online and picked up in store.
