It seems like every time a Domino's gift card deal is posted to SD, someone repeats this false claim. And some people believe it.
Just check out Domino's website -- there are two lines for entering two separate gift cards. Yes, that means you cannot enter three gift cards, which is indeed limiting, but two is still greater than one where I come from.
And if you're choosing store pickup rather than delivery, you can choose 'pay at store' and then have them apply the additional gift card(s) once you get there. Or you can order over the phone and have them apply multiple gift cards that way if you want delivery.
Bought these last year and it was a PITA to use them. First , never had success using them with online order and then when I goto store, the terminal doesn't scan them and the worker there has to manually enter the numbers.

I bought this at regular price. Dominos will not allow you to use more than one $25 GC per order. So if you have an order for $47.88, you can only use one card. The other $22.88 will need to be paid for by a credit card. Just a heads up.
Not true, I paid around $80 from gift card for entire order.

My problem with Domino's is that their website will not allow gift card payments if the store is closed. By the time the store is open, the earliest time for pickup is a hour later. A real pain. Other pizza places take gift cards before opening without issue.

This is not correct. I almost always use two GCs on a single order as I have a lot of $10 GCs.

We rarely spend more than $50 at Dominos. Two topping medium pizza is $6.99, 2-3 will feed our family, 6-8 will feed a party. Getting 25% is icing on top.

My experience suggests the contrary. YMMV. The app is also suspect as are the point of sale machines in-store.
What experience is that, exactly? Here's a screenshot of Domino's website showing you can enter two gift cards, and the Domino's app works the same way: https://imgur.com/a/t4zB5Pp
Are you ordering through some third-party website/app? Did you try using multiple gift cards in-store and a grumpy Domino's employee pulled a "No pizza for you!" Soup Nazi routine? I'm honestly curious how this is YMMV and not just user error.
