If Apple wants more of my money, then all they have to do is release a 15" or 16" iPad Pro and I'd have no choice but to buy one. But in the meantime, I'm more than happy with my 12.9" Pro.

I used an Air2 with 64gb for years for Garageband multitrack recording, and Lumafusion video editing. It was tough to manage the storage when I had several video projects in-progress at the same time. But a couple at a time was no problem.
If you keep enough storage free you can do plenty with 128gb. It's a bit small for video editing, you'll have a hard time with large projects or multiple projects, but it's not impossible.
The 12.9" really is like holding a baking tray. Great for a laptop replacement (if you're fine with the shortcomings of iPadOS) but not a very good tablet for consumption. It has a clear advantage for drawing, though.
