Maybe I'm behind on the times, but I prefer/expect a dongle for gaming as I thought BT is still slightly laggy and has worse battery life.
It is. That guy doesn't know what he is talking about. Xbox has proprietary wireless that companies can license for use, but it is so full of audio glitches, crackling, and disconnects that it is almost always a terrible experience. The dongle solves that somehow and audio issues are rare. That other guy needs to do HIS research. Dongle is where it's at for this stuff.

And for Bluetooth he prob meant to connect to your phone, but then he says he prefers the MS branded headset which also doesn't have Bluetooth 🤔
7x is also compatible with the PS5. I don't have an xbox, but it's nice to have that option down the line. I use the 7x with my PC, PS5, and sometimes the switch.

Do your research, the 7X does not have bluetooth and you have to plug the USB-C dongle into the XBOX (or PC/Switch). For convenience I prefer the Microsoft brand headset for XBOX. For PC the Arctis 5 is probably more practical unless you need the very small USSB-C dongle. I have one of each and hardly ever use the 7X, maybe if the 5 ever dies.

As always, it's worth noting that the 7x will work on PlayStation, even if the marketing doesn't reflect this due to licensing restrictions. I've had a 7x for a couple of years and use it both on my Series X and PS5. The only downside compared to some other units is the lack of simultaneous bluetooth pairing that allows some other headphones to connect to both your system and phone concurrently. But with Xbox and PS5 both having more robust discord support as of now, it's not really a big deal.

The headphones sound great for positional audio, but aren't the warmest sounding if you're just wanting them for general listening. I still prefer the sound profile of my Sony XM3s for non-competitive gaming, for example. That being said, you can tweak the EQ using the Steel Series Engine software.

Haven't had any wear or tear issues since I've had it. For $100, this is a good deal IMO.

The mic is too sensitive, can't even turn my head without activating it and people can hear a pin drop 3 rooms over.

Microsoft wireless brand has done me better and is cheaper.
I use the Arctis 5 and I still get asked on occasion what headset am I on while playing some game, they say the voice audio is good from that one. I've been using it for nearly 3 years now.

Plenty of complaints about it if you're looking.

What would be the best gaming headset for the Ps5?

Preferably one that could also be used for PC, Series X, other gaming systems.
