Just an FYI, the Elite set has an adjustable angle from 15 to 30 degrees. However, many Japanese knives have a lower angle (11, 12 degrees). This would work great for most German style knives and is definitely better for them than an electric sharpener.
Still think that learning how to properly use a whetstone is your best option if you have higher quality knives that you want to last.
I would really like to have the Ken Onion edition! I can't afford anything now but I can also vouch for the Bereli website. I just bought a red dot and a couple of pairs of boots from them, and both orders came in pretty quickly. Good customer service, too.
Never used a sharpening system before. Was thinking of jumping on the Ken onion just because it's electric and looks fast and easy to use. But I also see people talk about the Elite set which is manual. Can anyone help talk more about the electric KO vs manual elite set?

I have the Ken Onion Work Sharp "electric belt sander" sharpener and the original work Sharp and other systems similar to this one.... If Work Sharp did this correctly (and they do make good quality products from my experience) this would be a "better" system for your needs and I think it will do a more accurate job and it would remove less material than the electric KO one (which can grid down alot of material quickly depending on the belt you are using.)
That being said I can sharpen a dull (not beat up, chipped etc) knife with the KO sharpener in about a minute including belt changes and finding an outlet.
Sharpening alot of knives or want to re profile multiple knives? get the KO electric....
Sharpening 1 or 3 a month get the WORK SHARP PRECISION ADJUST ANGLE SET KNIFE SHARPENER
One tiip is to start with the crappiest knives you have for practice and not your good stuff...... (think the back of the junk drawer stuff)
and also learn how to find the current blade edge angle with a sharpie......

One of the benefits to the Ken onion is that you not only can sharpen knives to a very sharp edge, bit I've used it for chisels, mining picks, axes, hatchets and low end wood plane blades.

I used to use sharpening stones and my knives never got as sharp as they should've been. When I discovered the Ken Onion sharpener, my life changed. It makes easy work of putting a perfect edge on your knives. I used to send my Cutco knives back to the company for "free" sharpening, but the increasing cost of round trip postage made that cost prohibitive. This sharpener gets my knives just as sharp as what I got back from Cutco.
I have the Work Sharp Wskts Knife And Tool Sharpener and love it. Best sharpener I've ever owned. Knives come out very sharp every time. This model cost me about $50 a while ago.

What stones did you use? Did you use a finishing stone?
I use a King 1000 and it gets the knife sharp, but not a satisfying sharp unless I spend more time than I like on it. Then I got a Rika 5000[a.co] to finish (after the King 1000) with a count down (10 swipe on each side, then 9, and so on, and like 5+ sets of 1 swipes) I get an edge that I love.
Any thoughts regarding the Electric Cullinary E5 vs the KO ? Which is better? I looked at a Youtube video that reviewed the E5, and it said that the E5 is fixed at 17 degrees. That seems to be too limiting, but does anybody have any comment on that? Otherwide the E5 looks to be a solid unit.

I have the Ken oinion and I have the spydraco system. I had it first and bought the Ken oinion version later. I love the spydraco system but assist family when it is hog butchery time. And the electric allows me to keep everything sharp in way less time. Both are very applicable systems, but depending on your volume...
