Just an FYI, the Elite set has an adjustable angle from 15 to 30 degrees. However, many Japanese knives have a lower angle (11, 12 degrees). This would work great for most German style knives and is definitely better for them than an electric sharpener.

Still think that learning how to properly use a whetstone is your best option if you have higher quality knives that you want to last.

I would really like to have the Ken Onion edition! I can't afford anything now but I can also vouch for the Bereli website. I just bought a red dot and a couple of pairs of boots from them, and both orders came in pretty quickly. Good customer service, too.

anyone know of a reasonably priced sharpener for kitchen shears? As far as i know, the sharpening angle is much different than a knife.

They've become more disposable item and i'd like to be able to give them a sharpen and keep using.

I'm tired of busting out my sharpening stones and going through the motions for my Japanese knives. Does anyone know if you can use any of these sharpeners for Japanese knives? It seems like these sharpeners may have set angles that are too obtuse.

Check out Speedy Sharp type sharpeners. I'm a big fan of them.

I switched to the desktop site and it was way down on the bottom as you check out....I did not see it on the mobil.site but maybe I missed it too

of course I went with the WORK SHARP PRECISION ADJUST ELITE KNIFE SHARPENER WITH SEVEN DIFFERENT GRITS + CARRYING CASE because of course I needed ANOTHER sharpening system....
