Seriously thinking about this one for the hunting cabin. We do at least 6 deer and tons of fish every season. Foodsaver Vac sealers have served us well for years but we usually need to get a new one every 2 years.
The difference comes down to how you'll use them for sous vide. If you're doing small batch and not concerned about long-term freezer storage, cheaper one's probably suffice. If you're doing deep-freezer storage for 6+ months, units like this are better suited.

Besides far more options on bags, and less expensive bags, the biggest difference is moisture.
You cannot use a suction sealer with anything wet.
A suction seal will pull liquid out, making a mess and prevent a good seal.
You can get around this by freezing before sealing, but that won't work with complex liquids (particularly salty), and get freezing damage.
Keep in mind, any kind of vacuum chamber sealer like this has to be BIG. The bigger it is, the larger the bags you can seal. With a suction sealer you can seal HUGE bags with a small unit because the bag is outside the machine. This comes up particularly with long items like whole fish, or big roasts.
The $700 price tag is a joke. Even at 270 not the beat deal, it doesn't even have an oil pump. Vevor dz 260s is what I got for a little more than this.
If you sous vide or marinate chamber vacuum sealer are the way to go.
I have a vacuum master. It's a lot bigger than this one. It's very heavy duty. Luckily, I bought my several years ago for only $450. It supposed to be factory refurbished, but I can't tell it's used at all. It works very well, never had any problem. I buy bags in bulk from restaurant shop store, a gallon size bag is cheaper than zip lock bag. I use it a lot, especially there was big steak sale. I always bought a lot and sealed them, the steaks could be kept in the freezer for a long time. This machine saves me a lot. I would suggest vacuum master if you want quality machine that will last you a long long time.
I cannot recommend you buy this unit. It looks the same as the vacmaster VP200 that I purchased a couple years ago. That unit lasted less than 100 uses. Complete POS. Look up reviews on the VP200 you will see that it was a big failure. Now it looks the like parent manufacturer is trying to dump old left over inventory since vacmaster doesnt sell it anymore. Even $150 would be too much for this unit. AVOID.
vacmaster has many models and used to sell this one as VP200 - they dont anymore - look up the reviews to see why. A good quality vacmaster with an oil filled pump will be over $800 and well worth it.

What difference does this make with sous vide? I you can use regular ziplock bags for sous vide.
