I'm wondering, though, how much would one have to spend to get a single 27-34" monitor arm like this one but smooth movement, which I assumes would require hydraulics, which wouldn't leak if used properly, and either locks into place or resist movement from light accidental taps, and can anyone recommend any? I'm talking one that can move in up to 6 dimensions, straight and rotationally. I.e. up/down, right/left, front/back, rotate CW/CCW, rotate up/down, rotate right/left.

The best single arm that I know of is the Amazon clone of an ergotron arm, still not cheap although you can save a bit on used if you wanna chance it... I like it, especially for what I paid for it, and it does the job, but I hate repositioning the monitor when I need to, for the reasons given.

I needed that tall arm, and the version I got for $28 had both arms on the same mounting point that attached to the base, so every time I would adjust one of the monitors, the other one would move OUT of adjustment. Then the pivot broke, and my $200 webcam that was on top of the monitor broke when the monitor fell (got lucky, could have been way worse and lost a $1000 monitor or more). Because of the risk, and that this is my station for work, I bit the bullet and bought the $450 Ergotron LX dual arm with tall pole... even used on ebay these things go for over $400 :/. It isn't hydraulic either I don't think (I dunno), but the adjustment smoothness and solidity is AMAZING. If it weren't for needing the tall pole with independent arms option, the options broaden A LOT, like this post here looks great for the $.
The Amazon Basics arm I posted is supposed to be an exact replica of the Ergo single arm LX (https://www.amazon.com/gp/product/B072J1CSCD), so basically it is the same system as mine (the HX ones are the heftier ones, maybe they are hydraulic? ¯\_(ツ)_/¯), assuming that is all true then hydraulic or not, it should be a different world better. I still have my HUANUO single arm that I use as my laptop holder to the left of the two monitors that the Ergo holds... and in the near future i do plan on getting one of these Amazon ones so that I can be more authoritative from personal experience... worst case I just send it back and get a real Ergotron. I am hoping that the Amazon version of the ergo LX feels just like my real LX, while saving me ~$100...
