I have the Mac mini m2 pro 16/512gb

I am an extreme power user and 16GB is the FLOOR for what I do. I wish I had gotten the 32Gb

Agreed. 16GB RAM has much better value than 512GB SSD. Which is exactly why Apple doesn't offer the 16GB version through Costco (or any other retailer). The MSRP difference is "only" $200, but it actually comes out to $300 over the sale price of the base model.
