Bread flour has a higher amount of protein than regular/all-purpose flour. More protein creates more gluten in the end product. The gluten is what gives bread its characteristic airiness and chewiness.

Unless a recipe explicitly calls for bread flour (or any other specific type of flour), you can just use all-purpose flour. Not all bread recipes will use bread flour depending on the type of texture trying to be achieved.

Yep. It is not uncommon to use bread flour for cinnamon rolls. In fact, my go-to cinnamon roll recipe uses bread flour:

If you have a preferred recipe, you can sub with bread flour without making any major adjustments to the original recipe. You may have to add a little more liquid if the dough is too dry but otherwise the steps are the same.

You like making your own pizza dough? Use this stuff (better yet, King Arthur). Note, when you make your dough, best to do it the night before and put it in the fridge (this is to retard the proofing process while at the same time, develop better flavor). Pancakes and stuff, use all purpose - lower protein, like10%.

Any suggestions for good pizza dough recipe?

The ones I have tried, turned out more like fluffy bread dough, not the chewy goodness of Italian thin pizza.

I'm a Detroiter so i usually make more of a pan style (not like Chicago). However, Kenji is from NY and has a great, great set of sites for food. Here is his NY dough recipe

I did. Checked the "Recalled Better if Used by Date: 27MAR2024 and 28MAR2024" in the alert. The 10# bag I got from the earlier deal post has the "better used by date" of: 06AUG2024, so I think I'm ok.
