Everyone claiming this is not for sushi has no idea what they're talking about. This is a high grade calrose rice and one of the go to's for sushi in the US. It has a high enough starch content (amylose) to handle being mixed with your seasoned vinegar and still hold together properly.

Edit - I have come to slightly prefer Nishiki over Botan and Kokuho calroses as it seems to stay a bit fluffier after seasoning (when cooked in a Zoji)

No, it's something that Americans made up

A surprising number of sushi places in the U.S. use medium grain rice because the proper type of short grain rice is either unavailable or prohibitively expensive

To the best of my knowledge, nearly all japonica is grown and consumed in California because it requires flood irrigation, and the demand is high enough and the transportation costs low enough to justify the crop

yea actually thats what I do. I wash in thrice in tap water and let it soak overnight in refrigerator and then rinse it again before I cook with it. cooking got reduced from 45 to 30 mins

The FDA safe amount of arsenic in food is 0.5-2 parts per million

On average, brown rice has about 154 ppb

You have to be eating a lot of rice to get close to unsafe​

We're here to share our knowledge so that you too could know your medium grain from your short grain, your calrose from your koshihikari. Wink

The short version is that this is a calrose - a medium grain rice that's designed to be as sticky as Japanese short grain rice. While it's not as good as Japanese koshihikari rice, it's still a good option, is a lot more affordable, is used by respected chefs and restaurants, and will make fine sushi.

But if you want to splurge on koshihikari rice, it's really good and there are lots of great options: Tamaki Gold, Nozomi, Shirakiku / Koshihikari, Kagayaki Select (<- the one I usually get). You may find, like I did, that it's so much better that it's worth the extra.

This is a decent price, but this is not Japanese rice. It's short grain rice grown in California and nothing like actual Japanese rice other than being short grain. It nearly identical to cheap American white rice and not worth paying more for. If you want actual Japanese rice get it from an Asian store with no English on it. We used to get this before moving to Japan.

Washing rice doesn't change how sticky it is or isn't. I mean it's cooked in water after all. You can get plenty of stickiness while still washing, especially with this rice in the OP.

I bought one of these last year, it was full of tiny bugs, I've seen weevils before and I'm pretty sure they are not, instead, they are just really tiny tiny brown worm or bug or whatever it's called... tons of them. Perhaps they would become weevils eventually, who knows.

Yea, we looked at Costco and they only have medium grain. We have it a try and it's fine for some purposes, but not sticky at all and it's drier. We don't prefer it at all.


We'll keep an eye out though in case they offer something good. Definitely cheaper
