this is a high quality rice, japanese grain grown in california. growing up with a japanese grandmother though, i find this kinda middle of the road, master of none type of rice. basically, the grain size and stickiness aren't conducive to the best sushi, nor the best side starch. but it will be good or better in most applications and the delivered price is good. no one ever died regretting they had some extra rice on hand, grab a bag or two for the house and one or two for charitable, tax deductible donations

My 91 year old mom was born near Sapporo - she's genuine.

I deleted my earlier comment as this is our "everyday" rice. Its use when making sushi rolls - there may be better.

Also note the five # bag is very close in cost/lb. as the ten #.

Nishiki is "New Variety" rice, a cultivar developed in California

Medium grain rice is considered "table rice" in much of Asia

Medium grain rice such as this is usually used in the United States for sushi because the proper short grain varieties, like real wasabi, are too expensive

I rinse the rice about 3-4x (or until the water is more clear) to get rid of the starch. I use a 1:1 rice-to-water ratio, or the ol' pinky trick. This rice is a bit more sticky than other kinds so it may help to fluff it and let it air for a few minutes before serving.
