People don't need whole sets anyways. Spending $100-$150 on a nice chef's knife, paring knife, and utility knife and some basic sharpening skills and most will have all they'd ever need and they will perform well and last decades with proper care.
I swear by these. They are affordable AF, but get the job done. Never needed more expensive knives. They sharpen easily. 5 years and going strong. No color flaking for me. And I've put them through the dishwasher many times.
Flaking comes when you jostle them around loose in a drawer. They come with blade sleeves, don't throw them out, use them!
