What you are getting with Synology for the extra money is the DSM and ecosystem.
I'm pretty tech savvy, but went with Synology for the ecosystem and convenience.
I currently have a DS220+ and use it as a private cloud for myself and my friends. I also use it for my surveillance cameras and have a dozen licenses for Surveillance Station and as a central file server for my computers.
It has a lot of other capabilities that can be added.

Plex has an option called optimized versions, where the transcoding is done in advance. Plex can be setup to make a lower resolution copy, automatically, each time you add something to it.
This comes at the expense of using up a bit more space, since Plex would then have another copy of each video, albeit smaller and lower resolution.
I have this setup mostly for remote access.
Plex will automatically pick the best match, reducing the need for transcoding.
I don't transcode, if you need that, get a unit with an Intel chip.
