Will this type of guitar make much of any sound when not plugged in? It looks like it has a hollow body so i am wondering if it can be sounding kinda acoustic if I don't plug in

yes, this is considered a semi-hollow guitar that is a bit thinner than a normal dreadnaught, and has a block of maple up the middle. it will make an audible sound without an amp but will not be nearly as loud as a full acoustic.
I have the all black version of this guitar. Plays great with a fast neck. Didn't need to do as much fretwork (sanding, polishing, removing sharp edges) on this as some other Indio's I have gotten. Based on reviews, experiences may vary in that regard.
I also have these headphones and they sound amazing for the price. Sound as good as my old AKG open back stand-bys. I got new ear pads for about $20 on Amazon and really improved the comfort.
Super tempted at that price but I definitely don't need anymore guitars. If it had a Piezo, though.... 😍

$900 for an Indonesian guitar doesn't make me super excited, though. I've played the Core model and the SE just isn't anywhere near as good, but the USA is also a lot more expensive 😂

I can reliably say that this is the best price for this model that I can remember. Even the gig bag is pretty nice! Reviews are generally - "great, especially considering the price - might need some setup, as even much more expensive brand name versions do." The other colors are not priced as low as this one.

I have this style of guitar (but not this make). Due to internal bracing you won't hear much difference when unplugged. But it certainly changes the resonance when amplified. The pickups on these are cheap, so be ready for some screeching and maybe some hum (little or not shielding). Monoprice are fine for beginners, and hobbyists. I have an LP-style Monoprice. It looks nice, but I literally couldn't fret a single note as-delivered. The materials are pretty good. I had to set it up before it was playable, but certainly not for gigging.

You can certainly learn through youtube. I'd recommend justinguitar.com Everyone will have different ideas of what guitar is best for a beginner, I say the best for a beginner is the one that inspires you to keep picking it up and playing.
