I would agree that this is a weird proposition of a hydration pack, according to my preferences, at least. Others might find it great!
I also prefer the "chase vest" alternative that rides "really high" between the shoulders and I feel it gives me more freedom on the bike and when walking alike.
Recent "aero" testing by Dylan Johnson & Silca also imply that a smaller pack that rides high to the head might have aero advantages for long, fast rides (they were testing for Gravel Biking Marathon type races).
What I don't like with my vest, is that it runs a bit hot, so if i cannot stand it pushing my jersey against me, I have a waist pack that its a bit less comfortable bouncing around, but runs cooler for sure.
That said, these are both much lighter, 1.5L bladder options, while this is a 3L...but in my mind is the worst of both worlds? More bulk around the waist inhibiting movement off the saddle and whatnot, and hot shoulder straps?
Also, "low center of gravity" ? I am 87kg/190lbs (one solid muscle, one solid ab, ofc). Camelbak, adding 2-3kgs 6 in below my neck or 16in below my neck doesn't throw me off much. If this is what you are after, get a framebag and a stand-alone bladder and be far happier (I plan to experiment with that on mu HT next).

You really should get something designed for hiking, even a walmart Ozark trail pack with hydration bladder slot will feel better since it's designed for that.
Just make sure at minimum it's a chest strap and ideally waist as well.
