I typically use thread cutting oil since I keep plenty on hand for tapping new and cleaning old threads. Just note that depending upon what you are doing with the final product (like painting) you then have to remove all the oil residue. So you may have to decide where the sacrifice should be made.

When i look at the 1/2 inch drill bit, it is humongous. Am i being overly precautious to use such an anchor to drill a big hole? i've never really drilled into a drywall so am scared to make such a big hole, especially if i chose to move the location of the pegboard in the future, or take it down. At the same time, i don't want my stuff to fall obviously.

That said, I would make sure to hit a couple studs. That Ikea offering is a lot nicer than the 4x8 sheets I have out in my shop that require frequent fasteners (with washer heads) to avoid stretching/bowing.
Looking at their brackets, the wall holes are likely 16" on center to match studs but they may not be. That's also assuming your studs are 16" on center as well as where you want it aesthetically, lines up with studs. If not, no sweat - that's where these drill bits can come into play.
Here is how I would do it:
1. Identify where you want the board (to fit your desk or desire) and mark it off. Blue painters tape works well as you can write on it and just remove it from the wall when done. So put up a long stretch of blue painters tape horizontally with marks showing both ends of the board
2. Find the studs along this length of tape and mark their centers
3. Identify if the bracket will hit the studs with the predrilled holes in the bracket
4. If not, see if moving it over a little until it does is ok and doesn't throw the final position off (again, aesthetics) too much
5. If it doesn't and you need to drill new holes in the bracket, center the bracket to be exactly where you want it, mark on the bracket where the studs are and drill holes using these drill bits. Make a hole for every stud you can hit. For this thin of metal, I wouldn't bother with cutting oil. It looks like the brackets have a reinforcement 'hump' in the middle so use safety as bits can easily 'walk' in cases like this. Using a punch first would be ideal but not absolutely required if careful. Start with a smaller bit but don't push too hard as they are more prone to snapping.
6. Drill a pilot hole through the drywall and into the stud, smaller than the screws you are using
7. Secure the bracket to the studs. Repeat for the bottom bracket
If for some reason you end up with a stud in the center and the two ends of the bracket with the pre-drilled holes are unsupported, I would use some normal 'tap-in' style drywall anchors. The kind you drill a hole for, tap them in with a hammer, and then screw into them.
If you end up putting a lot of weight on the board you could look into 1) getting another ikea bracket and adding it where needed or 2) getting a pegboard kit that comes with stands offs and adding reinforcement where needed. For the latter, you may have to get creative with the stands offs so they are the right height or you can make your own standoffs using a number of items. I'd likely use white 1/4 pex in this case.
This is all sight-unseen so you'll need to see what works in your case. Hope this helps
