I mean that's kinda the point of the screen high contrast for your activities, but I get it, more and more people use them for their smartwatch as well!

I prefer the MIPS screen, personally, but it seems like Garmin has fully embraced AMOLED so you'll have lots of choices soon.

It's been a while since I owned a Garmin watch after switching to the apple cellular watch for running. Do these now have cellular capabilities? Can I stream audible to Bluetooth headphones from this watch without my phone on me?

No official support for audible. You can load mp3 files on to the 16/32GB internal memory on the watch. There is official support for Spotify, Amazon music, etc, that can locally cache your music on the watch and then play to Bluetooth earbuds without the phone being present.
