We have a gas stove, and it has a middle burned with a cast iron (but small) griddle. I just want a griddle big enough to cook ~10 pieces of bacon, eggs, maybe some diced potatoes and that, and I thought this was a good approach. But when you call out it's more for parties, I also don't need something that is going to be such overkill that I am wasting fuel because I am not using the full potential.
With that in mind, is there a better middle ground option that you (or anyone) can recommend that is a larger flat top unit, but not a party size one?

This is an outdoor, deck or garage griddle, it should not be used indoors, and from what you are saying, you are just looking for something to do a nice breakfast in the mornings for the fam. If you don't have a problem going outside to use it and can afford it, get it, though the 28" might "fit" your needs better. If you do not want to go outside, there are other options....griddle pans that lay across multiple burners, stand alone electric griddles and more. I personally do not use griddles/flattops at home.
Sorry I'm not much help, but people on this forum have "a way" of being @h0oles for no reason, better to protect oneself then open the door for flames.
You know your budget, the size you need and how you want to use it. Asking for suggestions is great, but You should do a bit more research to help you consider alternative options.

First of all the build quality is better. The Griddle it's made from rolled steel not press steel so it won't warp and bend as easy. You can actually put large pots of water and it, won't Bend. plus it's made in the United States of America. Walmart is China junk.
Blackstone are designed and engineered in US, but actual manufacturing is in China. So, there's that.
