Propel looks like the older version with the dial. Much prefer the dial version vs. the newwer electronic versions.

Agreed... fast and quick. No touch screen, etc.

I feel the big Costco container is to too big to make small quantity of mint dippings. Their individual size is like 140 bucks. Way overpriced for what it is.

These things are just glorified blenders but they will last a couple of lifetimes. I've had one for about five or six years. I find the best use is grinding coffee beans. Put in about 2 inches of beans, set it to pulse and hit the button. A few seconds later you have freshly ground coffee. I honestly don't think they do any better than regular blenders in regards to making smoothies or frozen drinks, but I do feel like my kids will be making margaritas in mine when I've gone to be with the Lord.

What do people use these for? I assume not everyone is making milkshakes all the time? Are people blending spinach and kale and making green drinks?

No. It only looks like the 7500. Light duty model weighs only 9.6 lbs vs 12.5 lbs for the 7500. Lacks the advanced 2.2 hp motor and it is likely louder. It may counter dance like the Costco models. Lacks the 64 oz container which is an essential container. It is an internet myth that 64 can't blend small batches. Videos show pp not covering the blades with liquid, not going directly to full speed and not loading correctly. It's not even a good price considering that full power Vitamix has been selling under $300 new.

Green Juice not smoothies is the main function in our home. It takes a bit of practice to get bright green juice which is not oxidized from over-blending. I start with a small amount ice and ice water to keep the blend cool. Add a little frozen fruit. Another use is to liquefy scraps as we have no garbage disposal. Here's where the power of the 7500 really helps.

Protein shakes. Major reason you want these is to blend frozen stuff and ice cubes.

This is terrible advice. You need a burr grinder for grinding coffee - any blade style is going to leave you with a mess of particle sizes ranging from super coarse to super fine; you will have have a mix of under extracted and over extracted coffee as a result. If you're going to use a blade grinder, just buy pre ground and get dirt cheap stuff. Otherwise, you're just throwing money away.
