Would this work for pihole? I have given up on finding a raspberry pi.
Yes, plus lots of other things beyond that. I would recommend installing ubuntu server + docker, then running pihole in a docker container (https://github.com/pi-hole/docker-pi-hole). I do something like this, albeit not on this exact device.

Refurb mini PCs with older gen CPUs but comparable passmark are like 1/3 the cost on ebay. I guess if you only buy new this is pretty good

I have pretty much got all components for my gaming PC build. I don't have os yet. Can I buy this little cheap PC and then clone the win pro to that gaming PC then use this cheap PC as a Ubuntu server ?
I am pretty sure the license is embedded in the device, so no.

1/3rd the cost? You're saying you can find a decent 4 core, QSV enabled, 8gb RAM, nvme boot drive PC for $40 shipped? Give me a break. There are a few decent options around the $80 mark but they'll be much higher TDP, slower overall and have worse GPU capabilities in a larger form factor. They"ll also only have 1 Ethernet port.

Currently have an old server PC with few HDDs installed for mainly files backup and media streaming (video stored in HDDs). Seldom use as dedicated server for some co-op games (e.g Don't Starve Together). It has an Overclock 2600k with 32GB RAM DDR3. Wouldn't mind this miniPC if it can provide similar performance. Will just take out the HDDs and put them in Docking Stations and share data that way. Want something smaller, lighter, and use less power. Mine currently uses 80W idling and can spike to 210W during bootup and such. Would like some input if not too troubling. Thanks!
