FWIW, this is a much healtier and cheaper option compared to jars of pasta sauce. Just add some water, garlic, oregano, basil, etc, and simmer. Add more water to your liking, or a wee bit of sugar, peppers, whatever. As easy or complex as you want.

So much lower in things like sugar and sodium than the pre-made stuff, plus costs a fraction of the price and takes up a lot less space. Took me 25 years of cooking to learn this…
Seems like a decent deal, but I'll say this: if you've never used tomato paste in a squeeze tube, try it. I'm never going back.

I use the unseasoned stuff to make tomato juice. I don't see why this wouldn't work too, maybe a little more V-8ish with the added seasonings.

But at 60 cents per can you're still saving money vs the expensive tubes even if you only use a couple of tablespoons out of the can. Once a tube is open, you're suppose to use it within a couple weeks. Seems like the way to go, but it doesn't save money vs the cans.

I water bath can and/or lightly process and freeze fresh tomatoes. Add some tomato paste and good to go. If you are too lazy to skin them first.. When you get them out, process them and mulch up the skins. I don't notice a taste difference worth going through the effort of peeling most of them but you might.
