Actual film captures far more resolution than was originally transferred to digital. If they have that source film, they can rescan frame-by-frame and clean up those higher resolution film scans to achieve a legit 4k transfer. If they simply upscale, I'm not sure why they bother (this happens too).
Apparently the source film for the initial star wars trilogy (as it was originally shown) was cut down long ago, and it is no longer possible to scan the original source film, so those had to use lucas magic to get them to 4k (along with revisions/changes nobody asked for).

How can moves that old be "4K UHD"? Does software auto-magically insert pixels into film data?
I am puzzled.

I am puzzled.
These older movies were shot on something called film. They were not done with a 1080p camcorder. Film can be scanned down to any pixel resolution your heart desires. I hope that helps clear up your confusion.
