No 10GbE or TB4 with that B660I, but the GPU 2-slot limit is a valid point.
NUC: 14.1" x 7.4" x 4.7"
NR200: 11.50" x 7.28" x 14.80"
Completely different leagues in terms of size. Less than half the volume. IF that matters to you, the NUC is pretty much the only game in town. And seriously the build quality is amazing. I built an SFF PC in a little Hyte Revolt 3 case for my son recently that I was really proud of. This is about 10 steps up from that.
Also the $10 NR200 deal isn't a thing anymore. Price is really about $70. So let's do a real comparison in price:
Case: NR200 - $70 (still a good deal)
Fans: 2x 120mm - $30'ish (for quality)
Decent Cooler: $50'ish (for moderate quality...I'd pay more for Noctua)
Mobo: Z690 ASRock: $250
Processor: 12700K - $250
10G Ethernet: Thunderbolt Adapter - $150'ish (no PCIe slots available)
PSU: SFX 750 - $100
Total: $900
EDIT: forgot about the Thunderbolt support, so upgraded the mobo to reflect that reality.
Of course if you're not a 10GBe person, then drop that from the total.
And then spend hours assembling, cable managing, applying band-aids to cut fingers, etc. Again, tradeoffs.

I don't see that's a big deal, by the time it'll matter, this will be out of date.
