Since they are BT BLE, they just broadcast their readings out every minute or so.

This is a bit of work but my solution was to buy some ESP32 devices (they are small and have both wifi and bluetooth) and place them around the house to basically add bluetooth hubs around the house. (https://www.amazon.com/ESP-WROOM-...08D5ZD528). They are pretty cheap and can be programmed to read any BLE signals. There's a home assistant integration which allows you to pull BLE data into home assistant:

You need to program the esp32 devices but the code is easy to find online

Benefit of this is that you can basically read any bluetooth device over wifi connection (through home assistant). Example, I'm able to read my bluetooth bbq thermometer over wifi using these.
I'm also somehow able to read data from one my neighbor's CPAP machines =)

the bluetooth range on them isn't that great... however, the temp sensors are pretty sensitive and changes very quickly. I use these to monitor the humidity in my garage and basement.. and I can see the trend over time when I sync it.
the app isn't bad and govee products are not open-source-unfriendly.
