For those that don't know, the i5-12600KF has no integrated graphics.

Is this CPU capable of idling at fairly low power? I don't need a super powerful machine, but do need it to run 24/7, and therefore power consumption is a factor.

Single stick of ram seems weird… dual 8gb would have been better right?
2 would be better than 1. It's a budget setup and that's probably the compromise they had to make for the price. It's also pretty slow Ddr4, it's not hard to find a cheap 3600+ 2-stick setup. I'd have liked to see 2 but I'm not really in the market. This a great deal for a solid build.
Would this cpu work well with a RTX3080 or RTX3070?
Yes, good match for sure. Either gpu, 3070/80, would do well with this, but you'd be better off with a 2-stick ram configuration. It's not a waste for with cpu or gpu to be used together. It always comes down to which games you play, so it's impossible to be 100% confident, but with most AAA titles this mobo/cpu with either gpu can run high frame 1080p or smooth 1440p. 4K is more of a gpu limitation and the cpu here will do fine.
Anyone know of any similar deals with Micro ATX motherboards?
Well, depends if a MicroCenter is nearby. I'd assume they're running some deal with a bundle or you can build a combo usually with them and save $20 or something. I can't recall the details.

I'm running a constant ~100w in my current rig, but then I have 3 hard drives + SSD, and it records 4 IP cams.
Kidding, but I do enough tinkering with my GPUS (e.g. flashing BIOSes) that I need an Alder Lake with integrated graphics.
