If you want to do it yourself, get a good whetstone, watch some youtube tutorials, and practice on your cheep/old knives to get it down before you work on your good knives.

I have shun premier 8" chef so I really don't need it though
My theory is that a lot of people buy Shun (or any other popular brand) on name alone, but don't have a clue about how to sharpen them, so they quickly become display pieces.
And I get it. Trying to sharpen an expensive knife is stressful, as you don't want to wear it down faster than you need to.
Rather than spend $200 on a knife, some people just buy a Ken Onion Work Sharp and rely on those $50 Ikea sets which actually have some decent steel compositions.

Myabi mizu is a good buy even when not on sale, but I didn't see any big discounts at the moment, so I wouldn't feel a lot of pressure to buy right now. I think Shun and Myabi are the two makers that make the most eye catching production knives. However, Yaxell / enzo probably gives more knife for the money. The time to buy yaxell is when there's a 20 percent off coupon going...it will stack with any "lowered price" knives, but doesn't work on "clearance" knives. cannot use any sitewide discount coupons on shun or miyabi so just gotta wait for a nice sale to find the cheapest prices on those brands
