In yesteryear, the more advanced SLRs were always much larger and heavier than the intro-level.
Even with RAW theres small differences in exposure metering. Older Canon used have DR/ISO issues, Old Sony Color issues and weird artifacts.
The current RAWs from 3 brands are 80 to 95% similar. Not 99%
Sony color sci sucks and does take more time to get it right.

I have Canon DSLR glass, so I could use an adapter. But switching mirrorless to mirrorless might not make sense for everybody. Though... at $3k, it's mostly targeted at the pros that have more money to switch systems.
If not needing the battery grip, could always sell it on Fred Miranda or eBay and make back a little...but I love my battery grip as I've had a 180 kid league photographed over 6 hours and the 2 batteries in the grip lasted the entire duration.
As a professional photographer, practicality was my deciding factor not to pick the R5 - I never had the need to have images over 50mb files, and the idea of backing all those up. Buying a CFexpress card and card reader - I have experienced more than 2 occasion of a fellow photographer not able to edit on site because he forgot to bring his CFexpress reader, or the one he got is faulty. Another instant is buying one in emergency - something where an SD card shines.
Anyway, the R5 is a beautiful camera - just not for me. Maybe one day -
