seems like there is a bit of a difference in 11th gen vs 12th gen cpus and more difference than 1260p vs 1360p

The gram 17 has an 11th Gen processor along with an inferior iGPU; the display is the only thing superior about it. The 12th Gen in this one is noticeably and significantly better in terms of both processor and the iGPU which can handle light gaming.
Also, LG Gram 17 with the 13th Gen chip has been available for $799-899 in the recent past. So, there's no reason to consider the Gram 17 that you've mentioned.
