Blackstone griddles also easily warp which is why they now sell the Omnivore series griddle top with extra reinforcement steel around the perimeter. I've seen the previous griddle top version warp horribly. My 22" Blackstone warped, they sent me a replacement top, that warped too coming straight from the factory. Blackstone steel rusts just as bad as other steel griddles if you don't maintain it correctly, no matter where you live. Hot or cold rolled, clean it properly, oil it properly and cover it, and theyll last.
