Well nvm this, I thought it was a 5800x vs 5700x, did not look into 5700 all that much..

Be aware that on Amazon there's some reasonably priced motherboards available 100-150 but they are Amazon renewed which is refurbished. There's pros and cons going that route. 90 day money back guarantee at least but I don't think you get any warranty support from the motherboard manufacturer.
Right now the 12600kf is 195 on Amazon and z690 motherboards are 175 or more for new. Renewed ones are 120-150.
These amd deals have been popping up several times the last 6 months on either the 5700x or 5800x but the b550 motherboards there's way more choice of them than z690 ddr4 boards and they tend to be cheaper too.
Also is RGB important to you? Be sure to find a motherboard that supports aRGB and RGB. Depending on the case your installing it into and the RGB if you choose to use, uses different kinds, it's good to have both options.
Some boards come with WiFi and others don't, if that's important to you, keep in mind boards that come with those.
You will probably need to make a list of motherboards that have the features you want.
Do you want ATX or micro ATX? Micro atx may be nice for smaller mid tower cases but you lose out on some pci express slots and m.2 nvme slots as well.
Lots of planning goes into figuring out a computer actually but hopefully that helps.
Also some motherboards are so basic they don't include usb type c or any of the super fast usb ports so that's something else to consider to if it's important to you.

Really what I'm wondering is whether Black Friday would bring cheaper prices on these CPU/Mobo combos over what's available here.

What I like to do is use the honey chrome extension, it gives you an option to see prices of where an item has been in the last 120 days. And you can see if that is a good price or not or it's just a matter of waiting a couple more weeks for something better.
As far as ITX form factor goes, your motherboard choices will be limited, so see what options there are for motherboards first on either Intel or amd and I think you will figure out what direction to go. Just be aware that Intel also makes ddr5 versions of motherboards and you may accidentally buy one and ddr5 is still really expensive compared to ddr4 right now
