It's actually used SPECIFICALLY to help sticking to develop crust on proteins and then to release that crust with liquid which creates a super flavorful, readily available liquid / sauce, it's called "fond" search it up on the interwebs and be a MUCH better "cook" because of it.

To give another example, I was able to get the 4 qt week night pan @ $143.99 before tax with 5% PayPal credit card cash back and 8% urlhasbeenblocked cash back on Bloomingdale using their free coupon, a reputable retailer. This site sells at $139.95 @ second quality, and even with the 10% off, why would I want to take the risk of no return especially when these sales can be like lottery?
The point is, there're some good deals out there on some of these pans and if you do enough deal hunting and patience, I'm sure you'd find one online easily with more favorable terms.

It's fair for them to say you're stuck if you have buyers remorse, but it's not a lottery.
You're going to get a nice looking, usable piece of cookware. I ordered four pieces in the last sale, great experience, solid prices. Comments from those who buy in these are consistently good. If you're in the market, buy away!

I use carbon steel for fry pan but do use stainless steel for my pots. Slowly trying to upgrade my pots to allclad.

Echoing the sentiments of others on here, the pan I got (a 4 Qt Weeknight Pan) seemed to be almost perfect. However, we've recently had a few others come over to cook and they commented how there seemed to be a defect - the bottom is slightly convex, so oil pools in the sides and makes only the sides of the pan useable for frying, while stuff in the middle ends up sticking to the pan. Not sure if this is how it's intended to be.
