Hello. If I already have a Plex Sever that has a good video card can I just get this for NAS storage and connect to it Via a router and basically point my library at this NAS from my plex server? I have a beast of a router that will be hard wired so is this setup possible?

Yeah that's a good solution! Many are using NUC or n100 for transcoding and NAS for storage.

What's the router you have that is a beast?

Thanks for your answer. That's exactly what I was hoping to hear. Smilie I got the ASUS ROG Rapture GT-AXE16000 Quad-band WiFi 6E. I got like 38 devices connected. My security system, wifi light switches, 5 TVs, several computers, tablets, gaming systems, and more. Got 1gb connection and max out over wifi with 800mbps. Never have an issue with router. Runs like new without any reboots. Only time I reboot is after a firmware update.
