Folks before you order make sure you read the reviews of this company. A lot of the canvases arrive either bent or broken. The company does offer some semi good customer service in sending you another one. And then many other reviews also say that the canvas is arrived with a pretty bad smell so you would have to leave it in the garage outside for at least a week.

I ordered from this site maybe six times now - I have not had broken canvas but every shipment has a STRONG "printing factory" type smell. I have to open the package outdoors and leave in garage overnight / out on deck for at least six hours before I can bring it indoors. But the ink and print quality is nice.

Does anyone have feedback on the minimum file size of an image that won't look pixelated? Also, looking to use some images I found online, any idea if there is a potential for copywrite issues where they won't send it?

They will not have any issues with printing whatever you want, since you would be liable for any copyright infringement

A few things to note. First, 30"x40" is 4:3 aspect ratio, which is non-standard for APS-C and full frame cameras (they use 3:2 ratio). So you will need to crop the images unless you are using four thirds systems or small medium format.

Second, you need to have enough resolution to get decent DPI and print quality. To get 180 dpi on 30"x40" canvas, you'd need ~40MP sensor (larger if you have to crop to aspect ratio). Farther you stay from the print, lower DPI could be acceptable; however, those prints are mounted indoors, which implies close-up views.

Frankly, print of such size will become the focal point of your decor. I would invest into the highest quality outcome instead of trying to save money. Personally, I would print on metal. It costs significantly more - like 30"x40" print will be between $300-$400 but it is worth it.

Good advice.
Metal print of that size is $300 from Printique. Canvas print $250 (1.5" inner frame).
I have a metal print from Printique, albeit smaller. Incredibly impressive. Brilliant and sharp.

Received my order, one looks fantastic the other looks a bit darker than it did on my screen. Am going to reach out to customer service and see if there's any recourse.
