You can keep or cancel the cards anytime you want after getting the bonus. I generally cancel before next annual fee is due. In order to get almost continuous companion pass me and my spouse alternate every two years. You can only apply 24 months after the bonus date of current card. This way your companion pass will continuously get shorter and shorter.

I have been paying property taxes using credit cards (2.5 % fee though, your maybe different) for number of years.
Also, you can pay your estimated federal taxes using credit card. 1.85% fee is outweighed by points and bonuses. To do this you can reduce federal withholding at source and pay 1040ES every quarter with credit card. The above tax payments do count towards spending.
I see this heavily promoted here and on Reddit, Flyertalk, etc. every year, so SW is apparently reasonably happy with the deal. They could easily quash this if they wanted.
